A Chefs Assistant

I love taking cooking classes and back in the spring, I took my first class with Olaiya Land, held at Delancey. Last summer, I attended a farm dinner where Olaiya was the guest chef, so I was familiar with her cooking style. After attending a class, Olaiya inquired about cooking class assistants.. Why, yes, please! I've assisted her for 4 classes since the spring, and it's such fun. I was asked if I would assist at a charity dinner she was hosting at Dog Mountain Farm. Why, yes, please! How am I to turn down an invitation to be in the kitchen at a farm dinner?



I got home late on Friday from my trip, and headed to Carnation to the farm dinner. I was told beforehand that I would be sous chef #2-- happy day! I wasn't going to be some volunteer to pour wine, or pull plates- I get to work in the kitchen!

The menu was beautiful, and the day went very smoothly. Olaiya has this amazing disposition in the kitchen- she values your opinion and leaves to you follow her instruction and create. She asks you to taste something, and add salt or seasoning, if you see fit. She trusts your palate. It's a bit empowering, I must say!
I just assisted another cooking class, and will be gearing up for another round in the fall.. I think I found job #4 :)
